Chef's Tips
Sprouting the matki is not just traditional — it significantly increases the nutritional value.
Goda masala is essential for authentic Maharashtra usal — it has dried coconut and stone flower (dagad phool) in its blend.
The usal should have a balanced sweet-sour-spicy profile from the jaggery, tamarind, and chilli.
This is the base preparation used in the famous Misal Pav.
