Chef's Tips

Kanji is a traditional Delhi and Rajasthan fermented drink — the probiotic quality makes it excellent for digestion.

The mustard seeds need to be coarsely ground — not powdered — for the right tangy bite.

In spring (Holi season), kanji vada is a staple street drink across Old Delhi.

If you cannot ferment in sun, use a warm oven at the lowest setting for 24 hours.
